Bún bò Huế - spicy soup from Huế

Bún bò Huế is a spicy noodle soup from the imperial city of Huế. It is one of the most complex Vietnamese soups thanks to a multi-layered broth made from beef bones, lemongrass, and shrimp paste.

The broth is seasoned with chili oil and fermented shrimp paste. It is served with round rice noodles, beef, and blood sausage. A side plate of herbs, lettuce, and banana blossom accompanies the bowl.
