Borscht - Russian beetroot soup

Borscht is one of the most famous soups in the world. In 2022, UNESCO inscribed the culture of Ukrainian borscht cooking on its Intangible Cultural Heritage List, recognising its deep roots in Ukrainian tradition. It is also cherished in Russian and Polish cuisines.

Beetroot gives it a distinctive ruby colour and a naturally sweet flavour. It is cooked with meat, beetroot, cabbage, and potatoes, and served with a generous dollop of sour cream.
