Börek - Turkish yufka dough pastry
Börek is a traditional Turkish savoury pastry from thin yufka dough, related to Greek filo but thicker and more elastic. The dough is filled with cheese, spinach, minced meat, or potatoes.
Many shapes and varieties exist: su böreği (water börek with delicate layers), sigara böreği (fried cigarette rolls), or kol böreği (rolled into a spiral). Börek is sold in bakeries across the country.
