Boeuf Bourguignon, Burgundy Beef Stew
Boeuf bourguignon is an iconic dish of French cuisine originating from Burgundy. Beef is slowly braised in red Burgundy wine together with carrots, onions, garlic and a bouquet garni. The result is tender meat in a rich, flavourful sauce.
Originally a peasant dish, it was popularised by chef Julia Child in the 1960s. The key is quality wine, slow braising and the addition of glazed pearl onions, mushrooms and bacon lardons.
