Biryani, Indian aromatic rice
Biryani is one of the most celebrated dishes in Indian cuisine. Fragrant basmati rice is layered with marinated meat and cooked in a sealed pot using the dum method, slow cooking in its own steam.
The seasoning includes saffron, cardamom, cinnamon, cloves and bay leaves. There are two main styles, Hyderabadi and Lucknowi. Biryani is served with raita and is an essential part of celebrations and festivals.
