Beef Tartare - Czech Tatarák
Beef tartare (tatarák) is one of the most popular appetizers in Czech pubs and restaurants. It consists of fresh raw beef (most commonly sirloin or top round), finely chopped or ground, seasoned with Worcestershire sauce, mustard, ketchup, capers, onion, and egg yolk. It is served with toasted bread, which the diner rubs with garlic themselves.
- For beef tartare, the freshness of the meat is crucial, as it must be processed on the day of serving.
- Czech tatarák differs from French tartare in that the guest seasons it themselves at the table.
- The toast is rubbed with garlic, and then the guest spreads the mixed tartare on it.
- Tatarák is among the most ordered appetizers in Czech pubs and restaurants.
