Arroz Chaufa - Peruvian fried rice

Arroz Chaufa is a prime example of Peruvian fusion cuisine called chifa, blending Peruvian and Chinese traditions. Rice is stir-fried in a wok with egg, soy sauce, spring onions and meat.

It was born from Chinese immigration to Peru in the 19th century. It can be prepared with chicken, beef or shrimp. The key is cold rice from the previous day and high heat.
