Anticuchos - Peruvian grilled street food
Anticuchos are an iconic Peruvian street food. Pieces of beef heart are marinated in vinegar, garlic, cumin and ají panca peppers, skewered and grilled over an open flame.
They have roots in pre-Columbian Inca culture, when llama meat was grilled. Today they are sold at street stalls throughout Peru and served with potato and corn.
