Ajvar - Balkan treasure from peppers
Ajvar is a traditional Balkan spread originating from Serbia. It is made from roasted red peppers that are peeled, blended, and cooked with eggplant, garlic, and olive oil. Three basic varieties exist: sweet, medium-hot, and hot. Ajvar is traditionally prepared in autumn during pepper season and preserved in jars for winter. It is served as a side with grilled meats, on bread, or with cheese.
