Adana kebab - spicy Turkish kebab

Adana kebab is named after the city of Adana in southern Turkey and ranks among the most famous kebabs. It is made from hand-minced lamb mixed with lamb tail fat and pepper flakes.

The meat is shaped around a flat metal skewer and grilled over charcoal. Its hallmark is its bold spiciness from Turkish chilli peppers. It is served on lavash bread with grilled tomatoes and onions.
