Achocha - exotic vegetable from the Andes

Achocha (Cyclanthera pedata) is a climbing plant native to the Andes of South America. Its fruits resemble small hollow cucumbers with a delicate flavor. They are harvested unripe when they have a crunchy texture and slightly sour taste. In Peruvian cuisine, they are traditionally stuffed with meat, cheese, or vegetables.
