Abbacchio, Roman milk-fed lamb

Abbacchio is the Italian, especially Roman, term for a very young milk-fed lamb (up to roughly 6 kg). The meat is pale, exceptionally tender and faintly milky, the centrepiece of the Lazio Easter table.

  • A young lamb up to about 30 days old, fed solely on mother milk, weighing roughly 5 to 6 kg.
  • The meat is very pale, finely fibred, with a faintly milky taste and no pronounced gaminess.
  • Classic Roman dishes: alla romana, brodettato (lemon-egg sauce), and a scottadito (grilled ribs).
  • Abbacchio Romano has held EU Protected Geographical Indication (PGI) status since 2009.
